Arroz con Leche is full of cinnamon flavor

6 cups milk (1.5lt)

1 cup uncooked long grain white rice (185g)

1 cup granulated sugar (200g) or to taste

2 sticks whole cinnamon

Ground cinnamon for garnish

1/3 cup dried fruit (optional)


Pour the milk into a 4 qt (4lt) Dutch oven or heavy saucepan. Add the whole cinnamon. Stirring constantly, bring the milk to a simmer over medium heat. Once simmering, add the uncooked rice. Simmer and stir for 20 minutes, until the rice is tender.

Once the rice is completely cooked and tender, stir in the sugar. Simmer for 5 more minutes while stirring constantly.

Remove from heat and add optional dried fruit. Served warm or chilled.
