Roasted Tomatillo Avocado Salsa is the best

Roasted Tomatillo Avocado Salsa is very easy to make and is absolutely delicious on fish tacos. We make this salsa quite often at home. It is easily made spur of the moment for extra fresh flavor!

Roasted Tomatillo Avocado Salsa is Easy to Make

Because Roasted Tomatillo Avocado Salsa is a snap to make, you can use this salsa as a basic recipe to create your own signature salsa flavor. As you may have noticed, this is not a spicy salsa as there are no added fresh or dried chiles. But you can certainly add 1-2 of your favorite green chiles to roast alongside the tomatillos if you would like this salsa to be picante. Either fresh jalapeños or chile serrano would be my choice.

The roasting process is very quick when using a cast iron griddle. If you don’t have a griddle, you can use a skillet. If you elect to add chiles to your salsa, the roasting time is the same as for the tomatillos – about 3 minutes. Just be aware that you will need good ventilation for stove roasting chiles. Fumes from the chiles can be irritating to the lungs and nose.

Roasting Garlic is a Delicate Process

Roasting the garlic is quick as the natural oils in garlic are especially delicate. A light toasting on the griddle will bring out a lovely roasted garlic flavor. Make sure not to leave the garlic on the grill too long as the garlic can burn very quickly.

There are a myriad of salsas that you can add to fish tacos as well as toppings. My favorites are finely shredded cabbage, minced cilantro, and crumbled queso fresco. Of course, pink pickled onions or Cebollas en Escabeche are an easy topping to make also. The fish can be broiled, baked or fried, and the tortillas can be crispy or soft – Fish tacos can be presented in so many ways and each way is delicious!

Roasted Tomatillo Avocado Salsa

Ingredients

Scale

1–2 tbsp. olive oil (15-30ml)

4 tomatillos, husked and washed

2 cloves garlic

1 large avocado, peeled and seeded

Salt to taste

Instructions

Heat an iron griddle or skillet on the stove along with a small amount of olive oil. Once heated, place the tomatillos on the griddle until the skins are roasted, about 3 minutes. Place the cloves of garlic on the griddle and roast for 30-45 seconds. Remove the roasted tomatillos and garlic and place in the container of a blender.

Add the avocado to the blender container and salt to taste. Blend the mixture until smooth. If desired, pour the salsa into a squeeze bottle for easy serving.
